Misal Pav is one of the traditional Maharashtrian dish and a gorging dish having roots in Kolhapur, but it has got variety in flavors depending upon the type and availability of spices in the region .

Mumbai foods are very much time preserving and delicious in nature and the most important point of this special Maharashtrian dish is that it has been crowned as the Worlds tastiest vegetarian dish at the Foodie Hub Awards in London.

Misal Pav Recipe

Misal is a generally curry which is genuinely spicy and made with mixed sprouts or moth beans (matki) eaten best with the pavs which are buns (laadi pav), if not available then a good slice of bread would be a proper replacement.

Misal is garnished with mix farsan (mix chiwda) on the top and also some topped with onion and tomatoes. But, now you don’t need to go either to Mumbai or in London or any place in order to relish this miracle, you can get it straight in your plate if you follow the simple preparation steps.

There is a special Goda masala that is required to be made before heading for the Misal, as the masala will give out the fine aroma and texture. If the goda masala can’t be prepared due to any issues, then garam masala can be used as a substitute but the taste would differ.

Ingredients For Misal:
Moth (matki) bean sprouts (or mung bean sprouts) (whole green gram) – 2 cup
Refined Oil – 3 table spoons
Red mustard seed (rye) – 1 table spoon
Ginger & Garlic (lehsun) paste – 2 table-spoons
Onion – 2 big size cut into small pieces
Tomatoes – 2 medium size
Cumin (jeera) – 1 table-spoon
Curry Leaves – 8- 10 leaves
Indian bay leaf – 2 small leaves
Cabbage – half a cup (finely chopped)
Salt as per taste
Red chili powder – 2-3 table spoons
Turmeric ( haldi ) powder – 1 Table spoon
Water – 150 ml
Coriander leaves (kothimbir / dhania) – 1 bunch
lime juice – half a tea spoon
Peppercorns (kalimirch) – 3

Method
1) Take a pressure cooker and rinse the sprouts and pressure cook them with cubed potatoes, turmeric powder, and salt.

2) Put a pan over the stove and pour oil and heat it over low flame.

3) Add the mustard seeds, once it starts crackling then add the cumin and bay leaves then saute them for around a minute.

4) Add the onions followed by the tomatoes and ginger-garlic paste, chopped cabbage, red mustard seed (rye) then saute them to mix well and add the curry leaves.

5) >Add the coriander powder, cumin powder, red chili powder, and goda masala and stir well until the masalas gets mixed well.

6) Now add the cooked & drained sprouts and potatoes also add 1 cup of water. Season with salt and apply half a tea-spoon of lime juice. Cook it on simmer (low flame) for 8 to 10 minutes, stirring occasionally.

Garnishing: Unlike other dishes , Misal Pav requires a special type of garnishing ;

Ingredients for Garnishing
Chopped onions – half a cup
Green chilies (optional) – around 2 small
Lemon juice – 1 table-spoon
Coriander leaves – finely chopped
Goda Masala
farsan

1) Just before serving pour 1/4 of the misal in a serving bowl, sprinkle 2 table-spoon of mixed farsaan, 2 table-spoon of onions, 1 table-spoon of coriander and apply lemon juice over it.

2) The pav can be better fried in butter or oil for 30 secs on each side for the street side experience.

Serve immediately with laddi pavs and lemon wedges.

Goda Masala Recipe
In case you wanna make Goda Masala, here is the recipe for it.

Ingredients For Goda Masala:
Coriander seeds – 1 table-spoons
Poppy seeds – 1/2 tbsp
Cinnamon (dalchini) – 1 inch
Black cardamom (only seeds) – 1
Green cardamoms -2
Small Indian bay leaves – 2
Desiccated coconut (kopra) – 3 tbsp
Black stone flower : 1 tbsp
Black pepper : 1/2 tsp
Cloves – 5 (laung / lavang)
Oil : 2 tsp

Method:
1) Take a pan and put all the above items one by one and roast it on a low flame, once it is done and you can feel the aroma ,then take out the spices and put inside the mixer grinder for making it a fine Goda masala.
